Ingredients: 2 eetlepels bloem; 1/4 theelepel zout; 0.25 theelepel versgemalen zwarte peper; 600 gram kalkhaantjes; 2 eetlepels olijfolie, verdeeld; Een kom met een inhoud van 1/2 liter met gehakte uien; 1 teentje knoflook, gehakt; 1 theelepel gedroogde tijm; 1/4 liter magere bouillon met laag vetgehalte; 190 liter appelcider

Bereiding

Combineer bloem, zout en peper. Smeer het varkenshaas in 2,5 centimeter dikke medaillons; maak een beetje plat met de hak van je hand. Schil beide zijden van de medaillons met bloem en schud het overtollige vet weg.Reserveer het resterende bloemmengsel.
Verhit in een grote koekenpan 1 eetlepel olijfolie op middelhoog vuur. Voeg medaillons toe en bak tot ze niet meer roze zijn, ongeveer 2 tot 3 minuten per kant. Breng het vlees over naar een schaal en dek af om warm te blijven.
Plaats de koekenpan met druppels op middelhoog vuur. Voeg de resterende 1 eetlepel olijfolie, ui en knoflook toe; kook, af en toe roerend, tot de uien ongeveer 7 minuten goudbruin en gekarameliseerd zijn.
Roer in een gereserveerd bloemmengsel en tijm; kook en roer gedurende 1 minuut.Whisk in kippenbouillon en appelcider. Aan de kook brengen; kook, af en toe roerend, tot een beetje ingedikt, ongeveer 5 minuten. Giet de saus over de medaillons en serveer.
