Worst aubergine pastasaus

Ik heb deze laatste nacht gemaakt om over fusilli te serveren en mijn man heeft het net weggespoeld, wat zeer zeldzaam is voor hem. Dit is genoeg voor twee of drie maaltijden dus het is goed om in de vriezer te zetten.

Ingrediënten

Bereiding

In een vergiet, gooi de aubergine met 0,5 theelepel zout en laat gedurende 10 minuten staan.
Dep droog met een papieren handdoek en zet opzij.
Verwijder de omhulsels uit de worst.
In een grote, ondiepe Nederlandse oven, verwarm 1 eetlepel van de olie op middelhoog vuur.
De worst bruin maken en grote stukken breken.
Met een lepel met sleuven, overbrengen naar een met papieren handdoek beklede plaat.
Giet het vet uit de pan.
Verwarm de resterende olie in dezelfde pan op middelhoog vuur.
Kook de ui, selderij, knoflook, oregano, peper, aubergine en het resterende zout, af en toe roeren, tot de aubergine heel zacht is, ongeveer 15 minuten.
Voeg de tomaten toe en haal ze uit elkaar met een lepel.
Leg de worst in de pan en breng aan de kook.
Verlaag het vuur en laat sudderen tot het ingedikt is, ongeveer 35 minuten.
