Ingredients: Een kom met een inhoud van 1/4 liter die rijst bevat (voel je vrij om bruine rijst te vervangen indien nodig); 1 (425 gram) kan kokosmelk; 1 (822 gram) kan tomaten in blokjes snijden; 4 middelgrote habanero-pepers; 1 theelepel zwarte peper; 1 kleine gele ui (in blokjes); 60 liter plantaardige olie; 1 theelepel zeezout; 1 theelepel zwarte peper

Ik hou van dit gerecht ... het was altijd iets dat we thuis aten (Nigeria). Ik maakte het recept erg pittig, maar voel je vrij om de helft van de peper of helemaal geen peper te gebruiken als je niet gewend bent aan pittig levensmiddelen

Ingrediënten

Bereiding

Verwarm de plantaardige olie in een kookpot.
Voeg de uien toe en roer met zwarte peper gedurende een minuut.
Voeg in blokjes gesneden tomaten, habaneros en kokosmelk toe met het zeezout en dek af om ongeveer 7 minuten te koken (of wanneer het mengsel aan de kook komt).
Voeg de rijst toe en roer en bedek ongeveer 7 minuten (of wanneer de rijst bijna droog is).
Voeg de groene pepers toe en laat sudderen tot de rijst alle sappen heeft opgenomen.

* opmerking voel je vrij om meer zout en peper naar smaak toe te voegen.
