Oaxaca zwarte bonensoep

dit recept is van rick bayless mexican kitchen cookbook.it is een beetje anders omdat het geen extra kruiden gebruikt en garnalen bevat. Het smaakt nóg beter de tweede dag.

Ingrediënten

Bereiding

plaats bonen in een pot van 4 liter, bedek met 6 c water, breng aan de kook.
haal van het vuur en laat het 1 uur zitten, laat uitlekken.
voeg bonen toe aan de pot met 6 c water, breng aan de kook, laat sudderen.
voeg chorizo, venkel, uien, chipoltes toe, bedek de pot gedeeltelijk en laat 1,5-2 uur sudderen.
gebruik een staafmixer om de soep te pureren, of doe het in batch in een blender.
voeg de garnalen toe en bak 3-4 minuten tot het gaar is.
verwarm olie in een koekenpan.
voeg in batches tortilla's toe, bak tot ze knapperig zijn.
afvoer op papieren handdoeken.
serveer de soep gegarneerd met tortillastroken en bestrooid met queso-fresco.
